The Agilent/IPOS research collaboration into applications for Agilent’s chemometric software package, Mass Profiler Professional, has led to the development of a novel method for determining the species of origin of gelatine. The software was used to process UHPLC-QTOF data to identify unique peak markers to differentiate between beef, pork, fish and chicken derived gelatine (see graphic below). The method is currently being validated so that it can be used as a commercial service for authentication of the origin of gelatine within food products.
